Pork
Our pork sausages come from our own herd of Gloucestershire Old Spot crossed with Pietrain pigs, raised right here at Bryngwawr Farm. The Old Spot heritage brings exceptional flavour and marbling, while the Pietrain contributes a meatier, leaner finish — together they make a sausage that's rich without ever feeling heavy. Every link is made to a generous 70/30 meat to fat ratio, hand-filled into natural casings, and completely free from additives, preservatives, or fillers.

Classic
Our traditional pork sausage, seasoned simply to let the quality of the meat speak for itself. A well-balanced blend of salt, pepper, and a hint of nutmeg gives this sausage its honest, comforting flavour. Perfect for a hearty breakfast, a classic bangers and mash, or sizzling on the barbecue.

Leek
A nod to Wales in every bite. We fold sweet, gently sautéed leeks through our pork to create a sausage that's mellow, savoury, and unmistakably Welsh. The leeks bring a subtle sweetness and softness that pairs beautifully with mashed potatoes, a rich onion gravy, or a creamy cawl-style stew.

Rosemary & Thyme
An aromatic, herb-forward sausage that takes inspiration from the hedgerows and gardens around the farm. Fresh rosemary and thyme are blended through the pork for a fragrant, slightly piney finish that's wonderful with roasted vegetables, polenta, or simply a crusty loaf and a glass of red.
