Our lamb comes from native Welsh hill breeds — Welsh Mountain and Welsh Hill Speckled Face sheep — raised on the pastures of Bryngwawr Farm. These hardy, slow-growing breeds are perfectly suited to the Welsh hills, producing meat with the delicate, sweet flavour and fine grain that proper hill lamb is known for. Every box is butchered to order so you get a balanced selection of cuts, ready for the freezer.

Hoggett is the older sibling of lamb — sheep between one and two years old, from the same native Welsh Mountain and Welsh Hill Speckled Face flock. The extra time on pasture deepens the flavour and develops a richer, more savoury character, while keeping the tenderness you'd expect from a well-raised animal. It's the cut of choice for anyone who wants a little more depth than spring lamb.
